Umpa - Rava Idli Mix

House-made upma/rava idli mix. Made with carefully roasted semolina, curry leaves, mustard seeds, urad daal, and aromatic mild spices. Upma Recipe: Saute onions and your fave veggies, add 1/4 cup of Thindi's Signature Umpa Mix and a bit of salt to taste. Roast for a minute or two and add 1 cup of warm water. Mix well, finish with a big dollop of ghee and roasted cashews for an extra oomph. Makes 2 portions. Rava Idli Recipe: Add equal parts dry batter and yogurt (1 cup batter, 1 cup yogurt). Adjust to pouring consistency by adding water and salt to taste. Throw in lots of freshly chopped coriander, add a pinch of baking soda just before you're ready to steam. Mix well, pour into molds and steam for 10 minutes.
